Kamut

Kamut (also known as khorasan) is an ancient grain and is also known as the 'high energy' wheat. Kamut boasts about 30% more protein and 65% more amino acids than wheat and is rich in zinc, magnesium and vitamin E. It is also higher in lipids and is considered a high-energy grain that is favored by some athletes. Kamut breads are an ideal alternative for wheat sensitive people. Compared to wheat breads, Kamut breads are more easily digestible and provides alot more nutritional benefits. Kamut products have a low glycemic index, which means these breads are an attractive option for diabetics, dieters and athletes. Ancient Grain Bakehouse combines the traditional methods of sourdough baking with the sweet, nutty flavors of organic kamut flour. Millet

Millet is one of the oldest foods known to humans and is prized for its high nutritional values and easily digestible nature. It is particularly high in protein, fibre, B complex vitamins; iron, magnesium, phosphorous and potassium. Millet is tasty with a mildly sweet, nut-like flavour. Ancient Grains' millet bread incorporates the rich textures and full flavours of this wholesome natural grain which has survived the centuries untouched by modern plant science, and combines it with the traditional methods of sourdough baking. The result is a great tasting, easily digested, and nutritionally rich bread which is a delicious alternative.

Rice

Rice, the second largest world crop, and a staple food in Asia. Unlike most grains rice is grown on small paddies and harvested by hand, just as it has been for centuries. White rice flour is naturally gluten-free, rich in carbohydrates and low in fat. However for this bread recipe, we had to add gluten in order to enjoy the fluffy texture of a normal bread.
